Hi! I was wondering if LakeFS (OSS, on-prem) is able to support several S3 endpoints? How would you setup LakeFS to version data stored on AWS S3 and on-prem S3 (MiniO)? Would several distinct LakeFS instance be required (at least two), with one pointing to AWS S3 endpoint, and the other pointing to Minio on-prem endpoint? Is there a way to have a single LakeFS instance pointing to several S3 endpoints, where each endpoints handles different repositories for example?

Currently, a lakeFS installation supports one storage endpoint, so you'll need two lakeFS installations to support AWS S3 and Min.io.

FWIW - if you use SSO and SCIM, even if you have multiple installations they could all be synced regarding access controls. Nevertheless - It does require separate installations as Einat mentioned.
